Cajun Shrimp and Grits

Recipe

 Ingredients for Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 celery stalk, finely chopped
  • 1 cup diced tomatoes
  • 1 cup chicken or vegetable broth
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Ingredients for Grits:

  • 1 cup Southern Grits Company grits
  • 4 cups water or chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste


Steps for Shrimp:

  1. In a bowl, toss the shrimp with Cajun seasoning, ensuring they are well coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until they turn pink and slightly curled. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add garlic, onion, bell pepper, and celery. Sauté until the vegetables are softened and aromatic.
  4. Stir in the diced tomatoes and cook for another 2 minutes.
  5. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cook for 5-7 minutes to allow the flavors to meld.
  6. Return the cooked shrimp to the skillet and add butter. Stir until the butter is melted and incorporated into the sauce. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and keep warm while preparing the grits.


Steps for Grits:

  1. In a saucepan, bring water or chicken broth to a boil. Gradually whisk in the grits to prevent lumps from forming.
  2. Reduce the heat to low and let the grits simmer for about 20-25 minutes, stirring occasionally until they are thick and creamy.
  3. Stir in the shredded cheddar cheese and butter until melted and well combined. Season with salt and pepper to taste.


Serving:

  1. Divide the creamy grits among serving plates or bowls.
  2. Spoon the Cajun shrimp and sauce over the grits.
  3. Garnish with additional chopped parsley for added freshness.
  4. Serve hot and enjoy the flavorful Cajun Shrimp and Grits!
