Fish and Grits

Fancy Grits 

(From our Fancy Grits Recipe)


Ingredients for Fancy Grits:

  • 1 cup of Southern Grits Company Stone Ground Yellow or White Grits
  • 3 1/2 cups of water
  • 1 tsp salt
  • 1/4 cup Heavy Cream
  • 1/2 cup Colby Jack Cheese
  • 2 tbsp butter
  • 1/2 tsp of Cajun seasoning



Steps for Fancy Grits:

  1. In a medium saucepan, add water and salt and bring to a boil.
  2. Stir in grits, cover and reduce heat to low.
  3. Simmer on low stirring occasionally for about 10-15 minutes.
  4. Add heavy cream. Cover and simmer 10-15 more minutes, stirring occasionally
  5. Remove from heat and add the cheese, butter and seasoning. Stir until cheese and butter are melted and well combined.


Blackened Catfish


Ingredients for Blackened Catfish:

  • 2-4 Filets of Catfish
  • Cajun Seasoning
  • 1 tbsp Olive Oil


Steps for Blackened Catfish:

  1. While Grits are simmering, heat olive oil over medium in a pan, preferably cast iron.
  2. Coat both sides of the catfish filets with Cajun seasoning
  3. Cook filets in pan with oil on both sides. Approximately 3-5 minutes per side depending on the thickness of the filets. Test flakiness with fork. 
  4. Top your plate of Fancy Grits with Blackened Catfish Filets and enjoy!
