Fancy Grits

Ingredients for Fancy Grits:
Steps for Fancy Grits:
- In a medium saucepan, add water and salt and bring to a boil.
- Stir in grits, cover and reduce heat to low.
- Simmer on low stirring occasionally for about 10-15 minutes.
- Add heavy cream. Cover and simmer 10-15 more minutes, stirring occasionally
- Remove from heat and add the cheese, butter and seasoning. Stir until cheese and butter are melted and well combined.
Blackened Catfish
Ingredients for Blackened Catfish:
- 2-4 Filets of Catfish
- Cajun Seasoning
- 1 tbsp Olive Oil
Steps for Blackened Catfish:
- While Grits are simmering, heat olive oil over medium in a pan, preferably cast iron.
- Coat both sides of the catfish filets with Cajun seasoning
- Cook filets in pan with oil on both sides. Approximately 3-5 minutes per side depending on the thickness of the filets. Test flakiness with fork.
- Top your plate of Fancy Grits with Blackened Catfish Filets and enjoy!
